Christmas Special Snowball Christmas Cookies

Here's a recipe for Snowball Christmas Cookies, also known as Russian Tea Cakes or Mexican Wedding Cookies:

Ingredients:

1 cup unsalted butter, softened
1/2 cup powdered sugar, plus extra for rolling
2 teaspoons vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup finely chopped pecans or walnuts

Instructions:

1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.

2. In a large mixing bowl, cream together the softened butter, powdered sugar, and vanilla extract until light and fluffy.

3. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Stir in the chopped pecans or walnuts.

4. Shape the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.

5. Bake in the preheated oven for 15-18 minutes, or until the cookies are set and lightly golden on the bottom. They should still be pale on top.

6. Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes.

7. Fill a small bowl with powdered sugar. While the cookies are still warm, roll them in the powdered sugar, coating them generously. Place the coated cookies on a wire rack to cool completely.

8. Once the cookies are completely cooled, roll them in powdered sugar once again to give them a snowy appearance.

9. Serve and enjoy these delightful Snowball Christmas Cookies! They are perfect for holiday parties, cookie exchanges, or as sweet treats to enjoy throughout the festive season.

These buttery, nutty cookies are a classic Christmas treat and will melt in your mouth with each bite. They resemble little snowballs, adding a touch of winter wonder to your holiday celebrations. Enjoy!
