Ingredients:

1 cup (2 sticks or 226g) unsalted butter, softened
1/2 cup (100g) granulated sugar
2 cups (250g) all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup (180g) chocolate chips
1 cup (150g) caramel candies, unwrapped and cut into small pieces
2 tablespoons heavy cream

Instructions:

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Add the vanilla extract and mix until well combined.

4. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.

5. Divide the dough into two equal portions. Shape each portion into a rectangular log, about 1 inch (2.5 cm) in diameter.

10. Once the shortbread logs have cooled slightly, use a sharp knife to slice them into individual cookies, about 1 inch (2.5 cm) wide.

11. Spread a layer of melted chocolate on the bottom side of one cookie and a layer of melted caramel on the bottom side of another cookie. Press the two cookies together to form a sandwich. Repeat this process with the remaining cookies.
